Proofing Cabinets

One of the basic steps in the production of yeast products is the proofing process. It is a critical step, in that an under-proofed product has a dense texture and a lower yield. Hot Holding Cabinets

The product should also be kept at a minimum temperature of 140°F (60°C).

•           Thermostat—sets both the cabinet air temperature and humidity. On some models, the cabinet air temperature and the humidity have separate thermostats.
•           Heating element—Heats the cabinet as well as the water to create humidity.
•           Water pan—Holds the water to create the humidity inside the cabinet
